SUNDAY Would you like to hear the origins of Marmalade? Marmalade derives its name from Marmelo, Portuguese for Quince. It was not always made from citrus fruits. The first recorded arrival of Portuguese Quince Marmalade in England was in 1495, but it was Janet Keiller of Dundee who first introduced marmalade made with Seville Oranges, and by the end of the 18th century Dundee Marmalade was on every wealthy breakfast table. It is the food of heroes too. Captain Scott's jar of Frank Cooper's was found perfectly intact in the wastes of Antartica in 1980. It is now a vital component of the English breakfast.
