The Startup Cook – Vinegar Chips! 
 
For the past several weeks, I have been satisfying my hankering for burgers. Having discovered the convenient art of making the meat patty from scratch, burgers have become a weekly staple in the house. Of course, American food culture has spoilt me enough that I can’t imagine serving a burger without a side of chips, thus making way for this delicious recipe. 
 
Now when it comes to potato based dishes, I love experimenting with flavours. Evidently, this particular bite was a welcoming result of my trials.  It’s tangy, fiery and fresh in taste, complementing perfectly with your homemade burger. But if you do wish to skip on the burger and want to nibble on something, these chips make the ideal snack as well. 
 
My only words of caution are – beware! Once you pop you cannot stop! 
 
Ingredients 
 
3 (large) potatoes
1 ½ - 2 tbs of vinegar 
3 tsp of paprika
1 tsp of roasted chilli powder
2 tsp of oregano
Salt 
Olive oil 
 
 
Directions 
 
Preheat the oven to 200 Celsius. Prepare a baking sheet and set it aside. 
 
Wash, peel and cut the potato in to thick slices. 
 
 
Place the cut potato in a bowl. Add a teaspoon of salt to the potato and toss. 
 
 
Add the vinegar, chilli powder, paprika and a teaspoon of oregano to the potatoes, toss and leave to marinade for twenty minutes. 
 
 
Add a tablespoon of olive oil to the marinated potato slices, stir and place the slices on a prepared tray. 
 
Drizzle the remaining marinade over the potato slices. 
 
 
Scatter the remaining teaspoon of oregano over the potato slices and place the tray in the oven. 
 
Bake for 40 – 45 minutes (rotate once in between) 
 
 
Disasters, Warnings and Tips 
 
When I first made these chips, I baked it at 220 Celsius. It almost burnt. 
 
Serve these chips with some homemade burgers – Yum! 
 
 
The stupid WIFI in my house has been down since Tuesday. The repair guys are still on their way apparently. 
 
Have these chips warm – they are sensational. 
 
Feel free to increase and decrease the spices according to personal taste. 
 
If you are using white wine vinegar use around 3 tablespoons of it. 
 
Slicing the potato in to wedges means more baking time. 
 
You can also skip the baking part and deep fry the potatoes if you like.

I add an extra teaspoon or two of chilli powder - I love my vinegar chips extra spicy.
