The Startup Cook – Vanilla Cupcakes
Recently someone told me that it was “utterly depressing” to cook for oneself alone. This statement took me completely off guard because I almost always cooked for myself and enjoy it thoroughly. Cooking whether you are making food for yourself or for others is therapy on its own.
A particular treat I love making for myself is this. Yes I know it is not the most exotic dessert one can make but nevertheless if you are a vanilla fan like I am then this is pretty awesome. This cupcake recipe is courtesy Laura Vitale and after having experimented with a couple of other cupcake recipes I can safely say this is by far the best.
You can lather some chocolate icing or spread on it or you can just have it plain. It is yum!
Ingredients
¾ cup of all purpose of flour
½ cup of sugar
4tbs of butter
3 tbs of milk
1 egg
1 tsp of vanilla essence
½ tsp of baking powder
Salt
Directions
Preheat oven to 175 Celsius. Line a cupcake tin with liners and set it aside.
Cream the butter and sugar together.
Add the egg and vanilla and whisk together until you get a smooth mixture.
Then add in the flour, baking powder and a pinch of salt to the mixture and whisk for a minute.
Pour in the milk and whisk for a few seconds or until all the ingredients have incorporated well.
Carefully scoop the batter into your lined cupcake tin (but fill it only ¾ of the way up).
Bake for 20 minutes.
Disasters, Warnings and Tips
Have a cupcake warm with a cup of tea – yum!
The measurements here will provide you with six yummy cupcakes.
DO NOT OVER MIX! Mix gently.
I lathered some melting brandy butter upon these cupcakes before devouring them.

The batter needs to be thick but not watery.
I love cooking for myself. My success rate is the best when I cook for myself.
