There is something indescribably comforting about cookies. Even the whole process of making it is soothingly straightforward. Better yet, you can eat them before it goes in to the oven. Cookie dough, whether it’s a sugar cookie you’re making or chocolate chip cookie, it is always pretty awesome. Then while it’s baking it manages to perfume your entire kitchen and hall with its distinct scent.
Paving no exception to this, these sugar cookies are an absolute treat. Found on allrecipes.com, these fair coloured disks, remaining true to its name provides a crispy sweetness thanks to its sinfully crusty exterior. This biscuit is perfect with your evening cup of tea or coffee, especially if you are one of those people who have their warm beverage without any added sugar.
It’s delightfully crunchy, almost chewy and most definitely a treat for your taste buds.
Ingredients
1 ¼ cup of flour
½ cup of sugar + ¼ cup of sugar
8 tbs of margarine
1 egg
1 tsp of vanilla
½ tsp of baking powder
Salt
Directions
Preheat the oven to 175 Celsius. Prepare a baking sheet and set it aside.
In a large mixing bowl cream together the margarine and the ½ cup of sugar until it becomes light and fluffy.
In a separate bowl mix the flour, baking powder and a dash of salt together, and then whisk it in to the margarine mixture.
Add the egg and vanilla to the mixture, and whisk for a few second until all the ingredients are well incorporated.
Once the batter is formed, scoop out a bit in to your hand, and roll it in to a small ball.
Dump the ¼ cup of sugar in a bowl.
Put the dough ball in the sugar bowl, roll to coat it with sugar, place it on the prepared sheet and press to flatten (a little).
Repeat the process with the remaining dough.
Place the sheet in the oven and bake for 15 minutes or until the edges of the cookies have turned brown.
(Rotate once in between).
After the cookies have baked, take the sheet out of the oven and leave it out for about five minutes before transferring the cookies on to a cooling rack.

Have them warm - it’s heavenly.
Rotating is vital for even cooking.

Margarine adds a sense of richness to these cookies. But if you are averse to using it, stick to butter.
