The Startup Cook – Baked Chicken and Veggies

When long weekends are averted, Sunday nights are a gloom. There is a lot of rushing around in preparation for the upcoming hectic week. Understandably, the thought of any kind of home cooking may just add to the Sunday night blues. But dismiss those notions momentarily and consider this convenient dinner option that is designed to uplift low spirits.

Literally, all one has to do is lather a little oil on some potatoes, carrots, chicken and let it cook. Although the baking time is a little lengthy, it can be utilised to attend to any non culinary related chores. It’s a very simple recipe and the results are absolutely delicious.

But the most important factor is that it’s a comfort food, perfect to remedy a dismal Sunday night.


Ingredients

1 chicken leg & thigh (with skin)
2 carrots
2 potatoes
20 g of parsley (chopped)
3 cloves of garlic
½ a lime
1 tsp of honey
Worcestershire sauce
Oregano
Rosemary
Salt
Pepper
Olive Oil

Directions

Preheat oven to 200 Celsius. Prepare a baking dish and set aside.

Pound the garlic to a pulp and set it aside.

Wash the chicken thoroughly and place it in a bowl.

Juice the lime over the chicken, add a teaspoon of Worcestershire sauce, pepper, oregano, rosemary and half a teaspoon of salt to it.

Rub the pounded garlic on the chicken and leave it to marinade for about twenty minutes at least.

Wash, peel and cut potatoes in to thick cubes.

Add a teaspoon of salt, oregano and olive oil to it, stir gently and set it aside.

Take each chicken portion to your hand, and gently coat it with olive oil and place it on the baking dish.

Add the potatoes to the baking dish.

Bake for 50 – 60 minutes.

While the chicken is baking, wash, peel and cut the carrots in to bite size circular pieces.

Place the cut carrot in bowl, add a teaspoon of olive oil and the honey to it. Stir gently and set it aside.

Add the carrots to the baking dish only during the last twenty minutes of the baking period.

After the chicken, potatoes and carrots have baked take it out of the oven.

Garnish with the chopped parsley before serving.


Disasters, Warnings and Tips

While the food is baking, you will have to turn the chicken portions over to ensure even baking on both sides.

The price of olive oil is really annoying. HOW ON EARTH AM I TO EAT HEALTHY?! BANANAS I TELL YOU!

I had my baked chicken and veggies with bread buns. Delish!

If you like your chicken REALLY brown and cooked, you might have to bake for an extra 15 minutes.

This recipe serves one hungry person and two semi hungry people.

Bake an extra piece of chicken and use it the next day to make sandwiches.

I love parsley. But for this recipe it is optional.

You get dried rosemary in supermarkets.
