The Startup Cook – Avocado and Chicken Sandwiches 
 
Often used in a variety dishes, Avocado is an immensely popular fruit in the west. It is the base of guacamole, salads and often used as a spread for sandwiches. It’s the naturally bland taste of Avocado that makes it adaptable to the sweet and spicy. Here in Sri Lanka, it is relished with couple of spoons of sugar or condensed milk. 
 
After having savoured a scrumptious Avocado salad, I understood its importance in the savoury department. This particular sandwich has been my hero on busy weekdays, when lunch has no choice but to consist of a couple of slices of bread. The combination of a flavoursome chicken with a thick daub of Avocado is absolutely delicious. 
 
It is straightforward recipe and takes a minimal amount of your time obviously. And if that doesn’t convince you then maybe the fact that Avocado is considered to be one of the healthiest foods in the world might encourage indulge in this feel-good food. 
 
 

Ingredients 
 
100g of chicken (breast portion)
½ an avocado
1 small onion
2 cloves of garlic
4 slices of bread
4 slices of tomato
1 tbs of Worcestershire sauce
1 tsp of lime juice
½ tsp of olive oil
1 tsp of chilli flakes
Pepper 
Chilli powder (chilli powder)
Curry powder (roasted)
Paprika 
Sage 
Salt 
 
Directions 
 
Wash and clean the chicken of any excess fat. 
 
Pound to flatten the meat, then cut it in to small pieces and place it in a bowl. 
 
Pour a tablespoon of Worcestershire sauce, add a teaspoon of pepper, chilli powder, and half a teaspoon of salt and curry powder to the chicken and leave it to marinade. 
 
 
Peel, wash and fine dice the onion and garlic cloves. 
 
 
Pour the oil in to a sauce pan and place it on a medium high flame. 
 
Add the diced garlic and onion with a teaspoon chilli flakes to it and sauté until the onions start to change colour. 
 
 
Then add the marinated chicken to the sauté. Add a teaspoon of paprika and ½ teaspoon of sage to it and cook the chicken until it’s dry and begins to char. 
 
 
 
Once the chicken has cooked take it off the heat and set it aside. 
 
Toast the bread in a toaster or a grilled pan. 
 
 
Scoop out the avocado on to a bowl. Add the lime juice to it with half a teaspoon of pepper and a pinch of salt to it and mash the avocado with the back of a spoon. 
 
 
 
Lather a slice of bread with the avocado mixture, place two slices of tomato on top of it and then the cooked (and cooled) chicken on top of the tomato. Place a salad leaf on top of the tomato and then cover it with a slice of bread. 
 
 
 
(Repeat the same with the remaining bread and avocado). 
 
Cut the bread in to sandwiches and eat. 
 
 

Disasters, Warnings and Tips 
 
Cut the avocado just before you use it because it discolours before you could say boo. 
 
I love avocado and chicken sandwiches.

If you are making the sandwiches the night before, wrap it tightly in Clingfilm and refrigerate it. Do not heat up the sandwich by any means, let it thaw on its own. 
 
Use a ripe Avocado for this recipe. 
 
Add some cheese slices or mayonnaise or both for a powerhouse sandwich. 
 
You can make four sandwiches with this recipe. 
 
Skip the mayonnaise if you’re keeping the sandwiches overnight.
