The Startup Cook – Cinnamon Roll Pudding with Glaze

Long weekends are fantastic aren’t they? It is a much needed R & R time that one needs to recharge for another hectic week. However it is also time given to catch up with friends and family. Therefore if you are taking advantage of this awesome ‘LW’ (Long Weekend) and have decided to spend time with your family (and friends), this delicious sweet treat is just what you should make for them.

Borrowed from JamieCooksItUp, this dish definitely enhances your culinary skills. Nevertheless, do not be deceived by the lengthy list of ingredients and the ‘three’ steps needed to prepare this recipe.  Despite its half an hour baking time, preparation time is only a maximum of thirty minutes. It’s convenient and its requisite tiers guarantee a professional finish to an otherwise simple dessert.

It is one of those puddings that remind you why homemade food is always the best.


Ingredients

Cinnamon Roll

1 cup of flour
¼ cup of sugar
½ cup of milk
2 ½ tbs of butter
1 egg
1 tsp of vanilla extract
1 tsp of baking powder
Cinnamon
Salt

Cinnamon Filling

1/3 cup of brown sugar
4 tbs of butter
2 tsp of flour
1 tsp of cinnamon

1 Minute Glaze

¼ cup of icing sugar
1 tbs of milk
½ tsp of vanilla

Directions

Preheat the oven to 175 Celsius. Prepare a baking dish and set it aside.

In a large mixing bowl, place the flour, sugar, baking powder with a dash of cinnamon and salt. Gently stir all the ingredients together.

Add the butter, milk, egg and vanilla in to the dry ingredients.  Using an electric whisk, whisk together all the ingredients until everything is well incorporated.

Once a smooth and thick batter has formed, pour the batter in to the prepared dish and set it aside.

Place all the glaze ingredients in a medium sized bowl. Use an electric whisk and whisk all the ingredients until it becomes smooth paste.

Take a teaspoon, scoop out spoonfuls of the filling and place it on top of the batter.

Then take a butter knife and gently drag it through the filling and the batter, creating a marble like effect.

Bake the pudding for 35 - 40 minutes.

Once the pudding has baked, take it out of the oven.

Add the glaze ingredients in to a microwave-friendly mug. Stir the ingredients until a smooth paste has formed.

Place it in the microwave and heat up for about 30 seconds.

Take the mug out of the microwave, do a quick stir and pour the hot glaze over the warm pudding.


Disasters, Warnings and Tips

It is a mortal sin not to have this pudding warm.

This is what I call ‘happiness pudding’- absolutely delicious, comforting & convenient.

Feel free to use margarine instead of butter.

If you like your pudding moderately sweet, cut off the ¼ cup of sugar used for the roll.

Serve this pudding with some raisins or fresh strawberries.

I finished reading The Kite Runner by Khaled Hosseini. It made me very sad. And it also gave me nightmares. Don’t ask me why.

For best results use a square shaped baking dish.
