views 1393With the kids at home during their summer holidays, breakfast has turned out to be a demanding affair. Now having copious amounts of time, they linger at the table turning their noses up at my usual bed and butter or cereal dish ups. I am required to be creative and produce culinary works of art..and taste. Since I love food and the variety of it in the world I take this as a challenge and to widen my culinary horizons I did some intense research. Of course since I am serving children I have to be selective in the choices offered and rather than have sugary and sweet options, I would like them to eat healthy too. Thus, an Italian favourite, the everyday sausage frittata was readily accepted with “ooh’s” and “ahh’s”. This dish is highly versatile, can be a breakfast dish or even a dinner time meal with a side of vegetables or fries. Make one for your family today!
Ingredients
Sausage meat, deskinned lingus or sausage meat of type will do just fine
1 cups of cubed boiled potatoes
4 eggs
¼ cup of grated parmesan cheese
A cup of chopped tomatoes
Dollop of ketchup
2 onions thinly sliced
Teaspoon of pureed garlic
Salt and pepper to taste
Method
In a heavy based sauce pan add the garlic and sausage meat deskinned and cook for about four to five minutes. Add a dollop of ketchup and let it cook some more until cooked. Now turn down the heat and add the boiled potatoes. In a separate bowl whisk together the eggs, salt and pepper and grated cheese. Pour over the sausage mixture. Now turn the heat down, cover and let the egg and sausage mixture cook halfway, top with sliced onions and tomatoes and cover again until the dish is completely cooked through.
