views 556As a busy parent, a casserole should be your go to when the days have been long and you're looking to whip something up in a jiffy. My closeted love is of course the simple chicken casserole, always different but never disappointing. I tend to mix the chicken with whatever I have in the fridge at that time. However stressful your day is, this warm, cheesy casserole will warm all your troubles away. It also provides your children with a balanced serving of foods, for you can hide those sneaky vegetables in layers of delightful goodness. Parenting days can be long, hairy and stressful to the point, so why make things complicated, just give my chicken casserole a try, like the swish of a fairy tale magic wand you'll feel a whole lot better with a bite of this casserole.
Ingredients
· 5 flour tortillas
· Boneless chicken, boiled
· 1 packet cream of chicken soup made
· 1 tub of cream
· 2-3 diced tomatoes and 2 green chilies
· 3/4 cup of Pasta Roma garlic sauce
· 2 cups shredded cheese (I use mozzarella or Kotmale Swiss cheese)
Instructions
Preheat your oven to 350 degrees. Grease a 9×13 inch casserole dish.
Stack all 5 tortillas on top of each other. Roll the tortillas up and then slice them into strips, about 1/4 – 1/2 inch thick.
Combine the tortilla strips, chicken, soup, cream, tomatoes, chillies and 1 and 1/2 cups of the cheese in a large bowl. Stir to make sure its well mixed. Pour the ingredients into your prepared casserole dish and cover with foil.
Bake for 45 minutes. Remove the foil and add the remaining 1/2 cup of cheese to the top of the casserole. Bake for an additional 10-15 minutes or until the cheese is melted and the casserole is hot and bubbling.
