We live in the tropics after all and nothing entices the tastebuds other than a pineapple oriented fruity dessert. Quick and delicious, this is the perfect evening tea time snack, lunchbox fixer or after dinner coffee treat that every mother should have in their book of recipes to impress with much little work! We are mothers after all, shortcuts are allowed, so be kind, we aim to please. But the luscious golden pineapple married with shredded coconut all the while encased in the sugary puff pastry shell will leave you weak at the knees and wanting more, at its culinary pleasure. Also as my son quite accurately pointed out in his all of nine years, they resemble monsters feet, so a great treat for Halloween that's coming up!
Ingredients
- Can of condensed milk
- 2 cups of chopped pineapple
- Cup of sweetened shredded coconut
- Dash of vanilla
- A couple of table spoons of brown sugar
- Puff pastry packet, thawed and rolled out
Method
First make the filling, cut your pineapple into tiny cubes, mushing some down as you go along. Put this into a bowl and add your can of condensed milk, dash of vanilla and the cup of shredded coconut. Mix it until mixture is folded. Don't over mix it since we want our mixture to have a bit of bite. Now roll the puff pastry out until you have a thin rectangular shape. Cut the puff pastry in half length wise, now place a bit of the mixture along the middle of each strip. Bring the two ends of the strip together, whilst covering the mixture. On the folded edge make slight cuts with your knife. Spread a bit of milk over the top so it goes a golden color when placed in the over for 20 minutes at 180 degrees. Take then out when done and dust with some brown sugar. Enjoy!
