Recipe: Passion Fruit Slice

Who doesn't like the enticing exotic taste and aroma of our tropical passion fruit? Sweet with a touch of inviting tang, the sweet heady scent of the passion fruit transports me to a carefree island day of comfort. Food, is indeed powerful instigators, not only offering taste but also a slice of reminisce. This recipe for passion fruit slice is delightful to make as well as eat. Biting into the fruity delight, the mouth explodes in flavour, leaving a tangy but sweet taste, compelled with a dollop of vanilla ice cream, it's a taste sensation not to be missed. 
 
 
Ingredients 
 
· Melted butter, to grease 
· 150g  flour 
· 85g  of desiccated coconut 
· 100g of brown sugar 
· 100g butter, melted 
· 1 can sweetened condensed milk 
· 125ml fresh lemon juice 
· 2 tablespoons passion fruit pulp 
 
Method 
 
Preheat oven to 180°C. Brush a 16 x 26cm slab pan with melted butter to lightly grease. Line the base and long sides with non-stick baking paper. Use a wooden spoon to combine the flour, coconut, sugar and butter in a large bowl. Use your hands to bring the dough together in the bowl. Transfer to the prepared pan. Use a metal spoon to press firmly over the base. Bake for 12 minutes or until light golden. Set aside to cool. Reduce oven temperature to 150°C. Use a balloon whisk to whisk together the condensed milk, lemon juice and passion fruit pulp in a large bowl until smooth and well combined. Pour into the pan and spread evenly over the base. Bake in oven for 15 minutes until just firm to the touch. Set aside to cool completely. Cut into slices to serve.
