Recipe : Passion Fruit Custard Cake

There's something invitingly addictive about our everyday passion fruit that just never gets old. The sweet pungent smell for me signifies long luxurious summer days by the beach...bizarre yes...but they are just some of my favourite things and to me encompass happiness. And now I have another reason to love passion fruits even more. This delectable teatime favourite - the Passion Fruit Custard Cake! It has, yes, entered our lives and changed it for the better. We are more happier, more exuberant with a slice of this wondrous cake by our side. Served with a scoop of vanilla ice cream it can even be dressed into a elegant dessert. Therefore, puzzling about what to whip up for the family for tea, give this a shot, you will passionately fall in love. 
 
 
Ingredients 
 
- 4 egg yolks 
- 1 ¼ cups of sugar 
- 125 grams of melted butter 
- 2 tbsp of passion fruit pulp 
- 1 tbsp of lime juice 
- Grated zest of 1 lime 
- 1 tsp of vanilla extract 
- 1 ½ cups of flour 
- 2 cups of milk 
- 4 egg whites 
- ¼ tsp of cream of tartar 
 
Method 
 
Preheat oven to 106c. Lightly grease and line a cake pan. 
 
In a large bowl using an electric mixer, beat  yolks and cups of sugar. 
 
Beat in the melted butter, with the tablespoons of passion fruit pulp, lime juice, finely grated zest of lime and vanilla extract.
 
To this mixture now add the plain flour, beating to combine. Gradually add the cups of milk, beating well. 
 
In another bowl beat the egg whites and  cream of tartar together until soft peaks have formed. 
 
Using a metal spoon fold into cake mix. 
 
Pour into pan. Bake 50 to 60 minutes until golden and slightly wobbly. 
 
Cool and dust with icing sugar to serve.
