views 645The kids are back at school and the days have suddenly become a whirlwind of activity. One can be extremely organized and have meals pre-planned and whatnot, but I am indeed a flawed individual and when dinner time comes around a sense of panic grips me tightly as the littlest one screams, “Whats for dinner Mum”!!! Rather than meekly give in and order takeaway, we are mothers after all and resourcefulness is our middle name and therefore my pot lasagna can save any unplanned dinner night. It can be whipped up in a jiffy, is incredibly delicious, nutritious and the whole family will be guiltlessly fed without a delivery menu in sight. One pot lasagna is the answer to your weekday dinner woes, make it tonight.
Ingredients (4 persons)
- 2 slices of bacon chopped (optional)
- 300g of ground meat
- 2 chopped onions
- 2 chopped garlic
- Pasta sauce (Pasta roma)
- 2 tablespoon of tomato paste
- 300 ml chicken stock
- ½ tsp of dried oregano
- Lasagna sheets
- Grated cheese
Method
In a large skillet pan, pan fry the bacon and garlic. Add the onions and ground beef. If you would like you can add more chopped vegetables of choice. Let it all cook until the beef has browned,Then add half a jar of pasta sauce and tomato paste. Now add your chicken stock and give it a good stir. Add in your herbs. Break your lasagna sheets into squares and put into the meat sauce. Make sure there is sufficient water to let the pasta cook. Cover and let the pasta cook through and the sauce has boiled down. Sprinkle as much grated cheese on top, cover again to let the cheese melt. Enjoy!
