Recipe: Mini Meatloaves

Daily life with children is challenging enough, so why make mealtimes a messy and sordid affair? I enjoy cooking, I find it therapeutic. Stirring the pot and putting ingredients together into a delectable dish is equivalent to the Japanese art of making tea, in my books. But kill the Japanese string music, with a screaming baby, restless toddler and fighting kids, I require a dish that is quick, easy and still full of flavour.

These mini meatloaves are just the ticket, accompanied by some mashed potatoes and vegetables it serves as a healthy dinner, or leftovers can be thinly sliced and introduced to a bun combined with ketchup, mustard and mayo only to be nicely tucked away in lunchboxes. Extremely versatile, delectably delicious and still packed with all the nutrients that growing children need, these mini meatloaves should be in every mother’s recipe book.

Ingredients

300g Minced beef (or minced meat of your preference)
1 onion chopped
Minced garlic
Tomato puree
3-4 boiled eggs cut in half
1 egg
A cup of breadcrumbs
Finely chopped parsley
A dash of ketchup
A dash of Worcestershire sauce
Salt and pepper to taste

Directions

In a frying pan, fry your onions and garlic paste in a tablespoon of oil, you can add some dry herbs if desired. Pan fry them till it is half cooked. Turn off the heat and set aside. Now in a large bowl that will give you enough mixing space, mix together the ground meat, tomato puree, breadcrumbs, egg, parsley, ketchup, sauce and salt and pepper, also add the pan fried onions. Give it a good mix until all the ingredients have amalgamated and if you find the mixture too wet, you might have to add some more breadcrumbs.

Stop mixing when the mixture is in a consistency that you can mould into ball without crumbling. Take your boiled eggs and cut in half, then take a scoop of the meat mixture and mould it around the egg. If your family is not egg friendly then you can just omit the eggs all together and just make little moulds. Place on a baking sheet, cover with foil for 20 minutes and then uncover and bake for 10 minutes or until nice and brown. Simply scrumptious!
