Recipe: Gothamba Chicken Parcels

In all honesty my latest culinary discovery came about by chance. After a recent dinner party I was left with one many a “Gothamba” that I care to have in my larder. Therefore catering to my children's anti-spicy bordering on bland palate, my exquisite gothamba chicken parcels came into fruition. Soft buttery leaks giving way to silken strands of flavoursome chicken accentuated by a a hint of cheesy loveliness. The day was indeed saved once more, bellies full, immediate and extended family members satisfied, the culinary goddess had struck once again, leaving no-one hungry in her path. Leaving aside all frivolity, these gothamba parcels can be whipped up in a jiffy and is an easy wholesome way to feed you family. Enjoy!


Ingredients 

- Plain gothamba
- 1  chicken breast boiled and shredded
- 2 cups of chopped leeks
- 1 small onion diced
- 2 green chilies chopped (optional)
- Four cloves of garlic crushed
- Butter
- Salt and pepper
- Stock cube
- 2 tablespoons of flour
- 2 cups grated cheese

Method 

Into a large wok or skillet add a couple tablespoons of oil and your crushed garlic, let it cook for a few seconds. Now add your onions, leeks and a dollop of butter. Let the onions and leeks sweat in the butter and become translucent. Then add the shredded chicken, crushed stick cube, salt, pepper and green chilies if you would like. I left my quite non spicy for the kids. You can also at this point add more vegetables like shredded carrot, cabbage etc. Give everything a good toss and make sure is is all mixed through. Add the cheese and the flour and give in another toss. Now add a bit of water, keep adding till it becomes a think mixture, the flour helps to thicken it up. Once you are happy with the consistency of the mixture, take off the stove and set aside. Take your gothamba and spread it open , place a dollop of mixture in the middle, fold either side and roll into a rectangular shape. Do as many parcels as you would like, place in oven proof dish dab the tops with some butter and sprinkle with some more shredded cheese and place in oven until golden and melted on top. Enjoy!
