views 657I must confess that in our house lives ice cream-a-holics, if there is such a condition. No one will say no to a scoop of luscious, creamy, cold ice cream in any flavour. Therefore there is no doubt that this recipe was indeed well received. Extremely simple to make it gives a new twist on the every day ordinary vanilla ice cream. If one is apposed to gingernut flavouring then are plenty more flavours to try, with the procedure being just the same. But I do like to introduce my children to different and of course them to my old favourite - the gingernut biscuit. The gingernut pairs well with the vanilla ice cream tickling your taste buds into activation and then dosing them with the sweet hints of chocolate at the very end as you meet the glorious topping. Enjoy!
Ingredients
¾ cup butter, softened
1 ½ cup brown sugar
3 cups of ginger nut biscuits crushed
½ cup crushed dark chocolate chips
½ gallon vanilla ice cream, softned to a workable temperature
Favourite ice cream toppings, optional
Instructions
In a large bowl, mix softened butter, brown sugar, chocolate and biscuits together. Add more butter if you feel the need.
Spread ½ of the biscuit mixture evenly on the bottom of a greased 9x13 pan.
Smash a layer of vanilla ice cream over the top of biscuit layer until evenly distributed and as flat as possible.
Sprinkle remaining ½ of the biscuit mixture over the top of ice cream layer.
Freeze until set up and ready to serve.
When ready to serve, remove from freezer and cut into squares. You can serve it topped with your favourite ice cream flavours or just as is. Either way is delicious!
