Chocolate and Banana French Toast Roll Ups

When cooking for children, one must be aware of the ingredients of the dish. There really are very few children who eat all you put in front of them, vegetables and all. My children are heartless and cruel in terms of dishing out their opinions of the food I make irrespective of whether I have slaved away in a hot kitchen for hours for their benefit. “Eww, there’s green stuff in it”, they shout with horror and run a mile. So I was pleasantly surprised to come across this little dish which has become a family favourite, breakfast delight or teatime snack. I never have to cajole the illusive eater for seconds, but there’s chocolate in it you say, of course they’ll eat it. I agree, but I do go over board with the fruit and go easy on the chocolate. The family is happy and my culinary goddess crown shines brightly.

Ingredients

White bread, crusts removed
Nutella
Bananas, about 2 cut into thin strips
1 egg
2 tbsps of milk
½ tsp of vanilla
2 tbsp of butter

Method

Take the bread and cut the crusts, then roll them between a rolling pin to thin it out. Drizzle a few spoons of Nutella. Once done place a few strips of banana at one end and the bread up tightly. In a bowl whist together the egg, milk and vanilla. Put the butter into a non stick pan and let it melt. Dunk the rolled bread in to the eggy mixture, once thoroughly coated place on the bread, do all sides until golden brown. Take off the heat and sprinkle with some brown sugar. Truly scrumptious.
