views 758Sometimes I feel cookie dough is more delicious to eat than the actually cookie. But the thought of raw egg does keep one from holding back on wiping the bowl clean. Therefore I was ecstatically happy to find this version which requires no eggs and can be enjoyed as a dessert rather than a cookie. Speckled with luscious nuggets of molten chocolate, a scoop of the cookie dough pudding is a tantalizing indulgence. Children have to be held back when this dessert arrives at the table. A scoop of this delectable cookie dough along side some chopped fruit or a scoop of ice-cream can brighten up any rainy day. Give it a try you won’t regret it!
Ingredients
· 1 stick unsalted butter, softened
· 6 tablespoons light brown sugar
· 6 tablespoons refined sugar
· 1 cup plus 2 Tablespoons flour
· 1/2 teaspoon baking soda
· 1/4 teaspoon salt
· 2 teaspoons pure vanilla extract
· 2 tablespoons whole milk
· 2/3 cup milk chocolate chips
Instructions
In a bowl mix together the butter, sugars, and vanilla extract beat until smooth. Next add the flour, baking soda and salt and give it a good mix. baking soda, and salt to wet ingredients and mix. Add milk and mix until dough is firm and smooth. Finally fold in chocolate chips with a wooden spoon. Wrap in plastic wrap and refrigerate for a couple of hours. You can make batches and freeze for up to 3 months. A quick and delicious dessert for any unannounced guest!
