views 744Us Lankans are known for our fruit salads. At any given lunch or dinner, the dessert table always carries a fruity assortment that leaves the eater duly satisfied. So you wonder why the need for another fruit salad recipe, as if don’t we have enough already? But having recently had the pleasure of being introduced to this delectable delight, I feel the need to spread my joy with my readers. This fruit salad is like no other, sweetness accentuated with sourness, bejeweled pomegranate seeds clashing with sunlight coloured chunks of pineapple, this fruit salad is an enjoyment to the eyes as well as palate. One doesn’t need lashings of chocolate or wedges of gooey cheesecake to feel sweetly thrilled, this extremely nutritious and quietly interesting fruit salad will have the party in a buzz..oh and the kids will love it to!
Ingredients
Pomegranate seeds
Pineapple cut into chunks
Mango cut into chunks
Tin of lychees
Slices of banana
Coconut
Kithul Pani
Method
Using a potato peeler, shave your coconut into thin strips, add a dash of Kithul Pani and let it soak until you prepare the rest of the fruit. Bananas of course leave it last. Mix together the pineapple and mango, add in the tin of lychee, drain the liquid first. Scatter in the bejellewed pomegranate seeds. Then add the Kithul Pani soaked coconut shavings and finally the bananas. Give all the fruit a good toss, do not mix too much for fear of bruising the fruit. I personally think it doesn’t need anything else, but if you like you can add some brown sugar and please indulge with a dollop of vanilla ice cream or a good helping of Greek yoghurt for those of a more health conscious nature.
