views 712With the festive holidays around the corner, our tables are once again laden with sweet oily goodies and chocolate bunnies. There is a feeling of gaiety in the air, which can only be celebrated with a nibble and a munch on some delectable goodie. If you’re like me, I am always there to sample the said goodies, but when it comes to actually making them I’d rather opt for the easier or shorter route. Therefore this fanciful fridge cake recipe was right up my alley, requiring no baking or slaving over a hot stove but still promising oodles of yumminess. Being the holidays of course, the kids are attached to my apron strings, and thus I can easily enlist the older ones to do some mixing for this recipe which is so easy to do. Make this delicious cake for your family and friends today and your culinary goddess crown will gleam brightly just like the ICC World Cup!
Ingredients
200g of Danish butter cookies
110g of almonds, roughly chopped
10 glazed cherries
4 large kisses crumbled
150g unsalted butter
1 tablespoon of golden syrup
200g of dark chocolate
Method
Into a bowl add the broken pieces of biscuit, chopped almonds, kissed and glazed cherries and set aside. Now in a spate bowl, put in the chocolate, butter and golden syrup, place this bowl over a pot of boiling water and allow all the ingredients to melt together. Once done, now mix in the ingredients in the first bowl. Line a cake pan with cling film, allow it to hang over the sides, pour the mixture in. Put in the fridge until set. Take out, dust with some chocolate powder, cut big wedges and enjoy with an oozing cup of hot tea.
