Recipe: Chocolate Cheesecake Tart

Lately cheesecake has been a very good friend of mine! Which means the family has been trying  various kinds of cheesecake, much to the horror of my ever expanding hips. But all woes are forgotten when a bite of this wondrous chocolate cheesecake tart enters ones palate. Every bite a perfect explosion of excellence and incredible taste, it does not leave the cheesecake lover disappointed. Another endearing quality is that the sweet dessert despite the enormous amount of culinary satisfaction it offers, it is very simple to make. Therefore as busy parents, we are always on the lookout for simple but tasty recipes to serve our loved ones and I have found a winner for you. Make this a part of your dessert selection this weekend!


Ingredients

· 2-1/4 cups crushed chocolate cream-filled sandwich cookies (about 22 cookies)
· 1/3 cup butter, melted

Filling

· 2 packages (8 ounces each) cream cheese, softened
· 1/3 cup confectioners' sugar
· 3 cups white chocolate chips, melted and cooled
· 1/3 cup heavy whipping cream
· 1 teaspoon vanilla extract
· 1/2 cup miniature dark chocolate chips

Directions

In a small bowl, combine cookie crumbs and butter. Press onto the bottom and up the sides of a greased 9-in. fluted tart pan with a removable bottom. Cover and freeze for at least 1 hour.

In a large bowl, beat cream cheese and sugar until smooth. Beat in the white choc chips, cream, and vanilla until well combined. Stir in dark chocolate chips; pour over crust. Cover and freeze for 8 hours or overnight.

Uncover and refrigerate 3-4 hours before serving. If desired, sprinkle with miniature chocolate chips. Refrigerate leftovers.
