It's gloomy, cold and raining and this warm, cheesy chickeny casserole needs to be in your life right now. .or more rightly on your kitchen table tonight. Warm, gooey and just the right comforting ingredients on these wet and windy monsoon nights, this will definitely win over even the fussiest of eaters. The casserole is every mother's best friend on a busy weekday. It is easy to put together, nutritious for the kids and still grownup enough to be enjoyed by even the adults.
Ingredients (serves 4)
· 2 cups cooked chopped chicken
· 1 cans cream of chicken soup (packeted chicken soup is fine)
· 12 oz cream
· Boil and mash potatoes with butter, salt and pepper
· 1 (1oz) packet of Knorr white sauce mix
· 3 oz bacon pieces (optional)
· 1 cup cheese
· Egg noodles
· 1 tablespoon of garlic puree
· 1 cup of breadcrumbs
Method
Cook egg noodles according to package directions, drain. Preheat oven to 350 degrees. Combine chicken, soup, dressing mix, bacon and cheese. Stir in cooked egg noodles. You can also mix in some parsley if you would like. Pour mixture into prepared pan. Now carefully spread the mashed potatoes over the noodle base. Top with breadcrumbs. Bake for 25-30 minutes, until breadcrumbs are golden and the rest of the dish is heated through. Can be eaten just on its own or with a side of steamed vegetables or salad. A winner all around.
