Filling lunchboxes are a constant conundrum I face on a daily basis. Of course I could opt for the easier route and rely on my favorite short-eat stop to solve my lunchbox dilemmas. But there are some days I would like my children to eat clean and healthy, and give me the peace of mind that I, as a mother is doing something right. Therefore these baked chicken bites are just what you are looking for. Baked for healthiness, filled with chunks of delectable goodness, these bites can be enjoyed by the young and old. It can safety be tucked away in lunchboxes, chomped on as a teatime snack or even dressed up with some sides as a main meal, whatever takes your fancy, it is a sure must try.
Ingredients
- Chopped onion
- Boiled and shredded chicken
- Sliced leeks
- Cup of grated cheese
- Chopped carrots
- Two tablespoons of garlic paste
- One tablespoon of flour
For Pastry
- 1 ¼ cups flour
- ¼ teaspoon of salt
- ½ cup butter chilled and diced
- ¼ cup ice water
Method
First make the pastry.In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate. In the meatime make the filling, into a pan, add garlic, onions, leeks and carrots. Let them sweat for awhile, now add you chicken, seasoning, cheese. Keep stirring. Lastly add your flour and give ito a good mix, if you like the mixture a little wetter, add a dash of water. Roll pastry out and cut into a circular shape, put some of your filling in the middle. Fold pastry in two. Brush with butter and bake in the oven, until golden brown. Yummy.
