Sometimes along with my sweet treat I like a hint of salty or crunchy to balance out the flavours, and this dessert does not disappoint. Cake melting into warm gooey peanut butter, decadently laced with luscious chocolate, the palate will do cartwheels at this unexpected delight. Given my way, I could easily eat the whole lot of it, standing up straight from the bowl. But then the immense joy of eating delicious food is sharing it with your friends and loved ones. Perfect as an after dinner treat or a decadent slice over a cup of tea with a friend, this beautiful peanutty fudge cake will never displease but instead entertain and satisfy you with each bite.

Ingredients

2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 cup margarine
1/4 cup cocoa powder
1 cup water
1/4 cup milk
¼ cup of cream
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups creamy peanut butter

Directions

Preheat oven to 350°. Combine flour, sugar and baking soda in a large mixing bowl; set aside.

Melt margarine in a heavy saucepan; stir in cocoa. Add water, milk, cream and eggs, stirring well.

Cook over medium heat, stirring constantly until mixture boils. Add to flour mixture; stir until smooth. Stir in vanilla extract. Pour batter into a greased, floured 13-by-9-inch baking pan.

Bake for 20 to 25 minutes or until a toothpick inserted in center comes out clean. Cool for 10 minutes on a wire rack. Spread peanut butter on warm cake. Cool completely for 30 minutes.

Then spread chocolate frosting on top, cut into slices and enjoy to your heart’s content.
