Tell us a little about what you do.
I have received intensive professional trailing in the Wilton method of cake decorating (USA), PME Art & Craft (U.K), R.L Clement’s Cake decorating school. Coupled with over 25 years of experience working with a variety of brides has given me the insight to dedicate myself to crafting extra special wedding structures and cakes; contextually crafted to match the needs of individual clients. I use only the finest quality ingredients and aspire to making every wedding couple’s dreams come true. That’s why all wedding cake inquires and orders are handled personally by me.
Why do people prefer to go for a wedding cake structure than an actual full tiered wedding cake?
The technicalities behind making an actual tiered wedding cake limits the variety in theme and design that can be achieved. A wedding cake structure on the other hand provides the impetus for inspiration and imagination to run wild. Moreover there are also budgetary and conditional issues to consider - for example the shelf life of a tiered cake with buttercream icing on a hot day, it won’t last long!
Which is better - more tiers or less tiers? More décor or less décor?
I have seen a huge range of styles and ideas when it comes to wedding cakes. I have made everything from bejeweled super-cakes with seven tiers, to smaller, modest cakes adorned with flowers to match bouquets. A bigger venue space benefits from a taller cake. Conversely, a quaint backyard wedding looks sweet with a smaller wedding cake to match the space. The wedding cake is a great way to add more of your personality to the space, which is why making sure it fits the theme, and scale of the space, is important.
How do you design a wedding structure?
Designing a wedding structure is a complex process. The devil is always in the details! I have tons of ideas on how to make a cake special and unique, but nobody knows the guests of honour better than themselves. So the first step is a discussion with the couples; it’s helpful if they share their ideas and background. Then I consider the available time period, budget, theme and venue and start to put my mind to conceptualizing the structure. After many interactions with the couple and finalizing the structure visualisations, I get down to the actual process of building the cake.
What are some of the classic wedding cake flavours?
When it comes to dreaming up your wedding cake, outside appearances aren’t everything - what’s on the inside counts, too. If you thought your wedding cake had to be fruitcake... think again! Wedding cakes can come in almost any flavour you can think of. In the end - it's a matter of personal taste.
Traditional wedding etiquette held that the top tier of the cake was to remain uncut and stored until the first anniversary. If you would like to honour this, then the top tier of your cake needs to be fruitcake. Store it well, wrap and freeze it in an airtight container. When your anniversary comes around have it re-iced and enjoy.
Despite all this talk - the best flavour cake is the one the wedding couple will enjoy the most. Some popular flavours of 2015 are Traditional Fruitcake, Chocolate, Red Velvet, Pink Champagne and Sticky Date.
What are some of the most unusual cake flavours that actually work well with each other?
White Chocolate with Raspberry, Orange and Almond, Croquembouche and Butterscotch, Coconut and Lime to name a few.
What are some of the new trends for wedding cakes for 2015/2016?
The latest design trends that are on the top of the hit lists are the designs created by sugar veil. Unfortunately mats for the sugar veils are not freely available in Sri Lanka. A specially blended mixture is coated on the mat and dried, and it is placed on the structure later.
How much of the budget should be allocated to the cake?
This is purely a personal decision and varies vastly as per the requirements of the couple.
At which stage of wedding planning should you order the cake?
When it comes to making and picking your wedding cake though, the best time to come talk to me is after you’ve made some of your wedding style decisions. When you know your colour scheme, the overall “theme” of your wedding, flowers, venue, and estimated guest size, I can come up with an accurate estimate and creative design to match your taste. This should be done three months prior to the wedding.
A couple of things couples should keep in mind when picking out their wedding cake?
- Sometimes inspiration comes from the lace on your dress, the floral arrangements, or any decorating decisions. The important thing couples need to consider is the budget. I have plenty of experience working with all sizes of wedding budgets but having a number in mind allows me to design a cake to fit your needs. No matter what your budget though, I can design a beautiful and delicious wedding cake within your price range.
- Couples should come prepared to discuss the venue. A bigger venue space benefits from a taller cake. Conversely, a quaint backyard wedding looks sweet with a smaller wedding cake to match the space. Leave your family’s demands at the door, sit down, and pick a cake flavour because you think it’s delicious. Don’t be afraid to stray away from the conventional flavours to fit your literal taste.
