The Startup Cook : Homemade Soft Vanilla Cookies

Cookies are a public favourite, their adoring fan base include both children and adults. But any true cookie lover will tell you that homemade cookies are a so much better than store bought ones. The proof in this statement remains in this particular recipe.

A Laura Vitale delicacy, these cookies are magnificent. Besides the easy-to-make factor, they are absolutely delicious. Slightly crunchy around the edges and soft in the middle, this is a mouth watering treat that any food lover in general must try.

Every bite is phenomenal.

Ingredients

¾ cup of flour
½ cup of sugar
6 tbs of butter
1 egg
1 tsp of vanilla essence
¼ tsp of baking powder

Directions

Preheat the oven to 190 °C .

Prepare a baking sheet and set aside.

In a mixing bowl, whisk together the butter and sugar.

Once the butter and sugar are combined well, add the egg and vanilla and continue to whisk.

Add the flour and baking powder to the mixture and whisk until everything is combined.

Use a measuring spoon (tablespoon size), scoop out the dough and lay it (one at a time) on the prepared baking sheet.

Bake for 10 – 12 minutes or until brown around the edges.

Disasters, Warnings and Tips

I made around 12 cookies with these measurements.

Serve this with your evening cup of tea.

Cookie dough is my latest weakness.

After adding the flour, combine WELL and ensure the batter is lump free.

If you’re a strict culinary visualist, use a small ice cream scoop and get those perfectly shaped cookies.

Prior to baking, ensure that each scoop of dough has sufficient room on the baking tray (they spread in the oven).

Vanilla is an absolute favourite. Love the smell, love the taste.

Laura Vitale has earned my undying respect, thanks to this recipe.

I prefer salted butter, although the original recipe says otherwise.

This is my first attempt at baking cookies. It came out good. Yay!
