I’m trying really hard to stop myself from reaching for another cookie but giving into temptation (sugar, baked products, anything really) is quite easy, and after all how do you say no to a warm, chewy cookie, fresh off the baking tray? There’s a soft aroma wafting in from the kitchen of Dush’s café, and before long, the entire room smells of chocolate, mint and cashew.
Dush Ratnayake, along with a close friend Nichola Imtias have been upto their elbows and knees in cookie batter this entire month, busy baking away for orders pouring in – just for the decadent cookies by Bellissima, a dessert venture started by Dush and his brother Gayen a year back. The range includes four delicious variants which are the classic chocolate chip, white chocolate and pistachio, double chocolate chip and cashew, and a dark chocolate and spearmint.
The classic chocolate chip is everything you could possibly crave for when it comes to cookies, as I doubt you can ever get enough of the soft, chewy texture combined with little chocolate chips embedded in the cookie. The white chocolate and pistachio cookie is richer, with the addition of white chocolate and chopped pistachios baked into the top of the cookie. The double chocolate chip and cashew is turning out to be a favourite, as I’ve already eaten two. The richness of the chocolate combined with the chopped cashew nuts are a perfect match and very, very decadent. The dark chocolate and spearmint is possibly one of the best cookies in the entire range, and if you like your dark chocolate and mint (After Eights, anyone?), you would definitely love tucking into these cookies.
The cookie recipes are all Dush’s own and they come beautifully packaged in a royal blue box wrapped with a blue ribbon, each box containing two cookies of each variant, and is priced at Rs.850.
