Double Stuffed Chocolate Cookies

So culinary savants, our cookie expedition comes to an end this week but not without another gastronomical masterpiece. This week I do not disappoint for I have indeed saved the best for last, sweet, chocolately, buttery mixed with whole gamet of other sweet flavours, it boggles the mind to comprehend it's composition, that is simply because.. it is a double stuffed chocolate cookie. Your jaw drops in disbelief, but it is possible and it can be done. Why just have one cookie when you can have two?..Your children will love you forever when presented with a plate of these and culinary goddess cap will flow high and strong in the waft of freshly baked cookies. Enjoy!

Ingredients

1 cup softened butter
3/4 cup brown sugar
1 cup white sugar
2 large eggs
1 tablespoon vanilla extract
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 cups semi-sweet chocolate chips
1 package Kalo biscuits or Oreos

Directions

Preheat oven to 350 degrees.

In a large bowl, cream butter, brown sugar, and granulated sugar together with a mixer until well combined. Beat in eggs and vanilla.

In a medium bowl mix the flour, salt, and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined.

With a cookie scoop, form balls with the dough.

Place one ball on top of an Oreo cookie, and another ball on the bottom. Seal edges together by pressing and cupping in hand until a large ball is formed and Oreo cookie is fully enclosed with dough.

Place onto baking sheets and bake cookies for approximately 13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.
