The Startup Cook : Christmas Ice Cream Pudding
 
 
 
Hands down, Christmas is the best time of the year. BUT it is also the most hectic time of the year. Even if you don’t celebrate Christmas per say, this is a real guest attracting time. Therefore having treats available at a moment’s notice is a must. 
 
This particular recipe is inspired by Nigella. Based on her Meringue Gelato Cake, this Christmas cake version of it fits in perfectly with the season. Requiring only a small amount of ingredients and taking only a few hours of your time, this delicious delight is an effortless make and will guarantee you the best hostess award.

Ingredients
 
 
250 ml of whipping cream
½ cup of crushed Christmas cake
¼ cup of icing sugar
4 tbs of brandy
2tsp of vanilla essence

 

Directions 

 
 
Place the crushed Christmas cake in a bowl, pour 3 tablespoons of brandy to it, stir and refrigerate for at least 3 hours.
 
Line well a loaf tin with some clingfilm.
 
Pour the whipping cream in to a metal or ceramic bowl and whisk.
 
When the cream starts forming soft peaks, gradually add the sugar whilst whisking.
 
Once the cream has whipped, add a table spoon of brandy and the vanilla essence to it and fold.
 
Gently fold in the crushed Christmas cake in to the cream.
 
Pour the cream mixture in to the loaf tin,(using a spatula) press it down and smoothen out the top.
 
Bring the clingfilm up and wrap it on top.
 
Freeze for at least 5 hours.
 
After the ice cream has set, unwrap the top, take it out of the tin and unload it (face forward) on to a board and cut in to thick slices.

 

Disasters, Warnings and Tips
 
The crushed Christmas cake measurement is a hunch. I used 5 individually wrapped (regular) square pieces. 
 
If your cake is already a little boozy, refrain from using those 3 tablespoons of brandy.
 
Thanks to this weather I’m coughing my lungs out. 
 
Brandy also prevents the cream from forming icicles.
 
The vanilla essence and brandy helps to get rid of the pongy whipping cream smell.
 
Nigella’s Christmas special is the best. She is so awesome.

    Your recipes are good. But need to improve on presentation. At least use a tray to place the final products rather than a wooden cutting board.
