The Startup Cook : Chocolate Chip Muffins
There is a reason why comfort food is called comfort food. Besides nourishing your body and elevating your spirits it’s also convenient to make and more importantly it’s a joy to make. No cursing in the kitchen (unless there is an irreversible kitchen disaster) or complaining or threatening violence on the cooker, making soul food is always relaxing.
On a brain wracking day, choose something delicious and simple to make (like these muffins), switch on some music and have your much needed wholesome lone time in the kitchen.
A date with oneself cannot be completed without a chocolate chip muffin.
Ingredients
50-60g of chocolate chips
1 cup of all-purpose flour
¼ cup of milk
¼ cup of white sugar
1 egg
1 tsp of baking powder
2 tbs & 1 tsp of vegetable oil
½ tsp of vanilla essence
1 tbs of white sugar
½ tbs of brown sugar
Salt
Directions
Preheat oven to 200 celsius. Prepare a muffin tin with muffin cases and set it aside
In a large mixing bowl sift in the flour, add ¼ cup of sugar, baking powder, chocolate chips, pinch of salt and mix well
In separate bowl add the milk, oil, egg, vanilla essence and whisk until well incorporated
Pour the milk mixture in to the large mixing bowl and combine well and until a thick batter forms
Take a regular tablespoon and spoon in the batter in to the muffin cases
Mix the tablespoon of white sugar with the half tablespoon of brown sugar
Dust the sugar mixture on to the top of the muffins
Bake for 20 -25 minutes

I baked my muffins without the muffin cases and poked them in to cupcake holders
