Today on WTF – we go to Aditya Resort in Galle to meet a simple, down to earth man who has been in the culinary field for 12 years. At age 29 he was the youngest Chef to be awarded with a prestigious Michelin Star but the best part of his success is the fact that he is simple and humble.



Born in the south of India, Alfred Patrick Prasad lived all over the sub continent during his early life which led him to be inspired by the mix of cultures and the tastes of India. Having a natural talent for both art and science, he found an ideal place where he could combine both – the kitchen. Using it as his lab of creative space, Alfred has taken Indian cuisine to another level.



He demonstrated two mouth watering dishes - both which I wanted  to try at home, but then again who am I fooling? I can't cook. I can only eat!

The first dish was a definite favourite and consisted of Tuna and Watermelon ‘Bhel’ with some Indian crush (Muruku). The crush and the freshness from the melon had the dish bursting with flavour.



It was followed by Prawn ‘Balchao’ served with steamed string hoppers. The  prawns were cooked on a super hot pan with a tomato based sauce which gave the dish that rich flavour. I had a happy feast and to finish things off, he spoiled me with his famous chicken tikka.



Speaking to me he said he is currently, focusing on opening his own restaurant and writing his first book.  “I want to make Indian food less carb but still keep the wonderful flavours” he says.

His visit to Sri Lanka was made possible by Trekurious, which made it a unique experience.
