Tosakanth - what’s with this name? That’s the first thing that comes to your mind when you hear it. Hence that’s what we checked on first, before we tasted the sandwiches. Tashya de Silva, the dynamic young girl behind this very new product explained to us.

“Tosakanth is Thailand’s version of Ravana from the famous legend Ramayana. On a visit to Thailand I had bought this t-shirt which eventually became my favourite t-shirt and I wore it all the time. Then my friends started calling me Tosakanth. Now Tosakanth has become a great part of me,” said Tashya.

The next thing that was fascinating was the moustache she uses as her logo for all her branding. She said she had a huge obsession with moustaches. The ear studs, pendant, bracelets and all the accessories she wore and even her tattoos were all moustaches!

Roast paan is becoming increasingly popular with people in recent times. Tashya brings a new perspective to the plain roast paan by making it interesting with some of her own creative fillings.

The bread itself adds a lot of value to this product as it’s soft and very fluffy. It’s made at their own family bakery and that’s probably why it really stands out. It’s not easy to find good soft roast paan out there, so this is a treat for roast paan lovers. One portion of the sandwiches, is half a roast paan. All the sandwiches are toasted with a generous layer of butter on the outside to give it that golden browning and the juiciness that is an important element of any sandwich.

I think the secret to a good roast paan sandwich is that it has to be crisp and warm when eating. So if you order take away, be sure to layer it with some butter and put it in a panini press if you have one or else toss both sides in a pan just before eating.

(Stars 4/5) The Chilli Chicken Sandwich (Rs 250/-) which was my favourite was with a tender, spicy, shredded chicken filling with several herbs adding an unusual flavour to it. Spice lovers would like this.

(Stars 4/5) The Cajun Chicken and Cranberry Sauce (Rs 250/-) is also a popular sandwich that is ordered frequently, said Tashya. Chopped chicken pieces are covered in spices and pan-fried adding mayo to make it into a paste. The cranberry sauce mixed into this paste adds a sweet and sour element to it.

(Stars 3.5/5) Pol Sambol and Cheese (Rs 150/-) The pol sambol has no Maldive fish in it so it’s ideal even for a vegetarian. It had a lot of chopped up cheese which melts when put in the panini press. Although I thought this would have been my favourite as I’m a great fan of the typical pol sambol, it lacked the typical flavour of pol sambol. But for someone who’s alright with pol sambol which is of a slightly different flavour, I’m sure they’ll enjoy it.

(Stars 3.5/5) The Ambul Thiyal (Rs 200/-) sandwich had flakes of fish with mayonnaise mixed through it and chopped onions and green chillies added to give it that crunch when biting into it.

Hailing from a family of bakers Tashya slipped into the arena of food with much ease.  Although she has a degree in Commerce from the University of Sydney and does a full time job, she says food is her passion and she has lots of plans to expand her business.
