Chef Charles is a multi-award winning self-taught chef and culinary artist in global contemporary cuisine. Charles is currently the Restaurant Consultant and Executive Chef for upscale French restaurant Vis-à-Vis in Brooklyn and the owner of boutique high-end catering company One World One Kitchen in NYC. Charles is known for creating his own unique brand of contemporary cuisine rooted in French cuisine, whilst showcasing bold global flavours and cooking techniques. Charles likes to stay connected with his motherland by making frequents trips to Sri Lanka, where he consults for the Lantern Hotel Group and on other local culinary projects.

It’s quite rare to meet a true master chef - a person who absolutely adores food, who believe in simplicity and fragrance and taste; those who take that extra step in creative preparation and presentation of cuisine. Now, imagine meeting two. Jacques and Laurent Pourcel are strongly influenced by the land and sea of the South and the Mediterranean. The twins excel at contrasts, with their creations rich in colours and tastes. In addition, their restaurant Le Jardin Des Sens (opened in 1988) is one of the top gastronomic venues in the south of France, boasting two Michelin stars.

Meera Sodha was born in Lincolnshire to Ugandan Asian parents and has been surrounded by a wonderful assortment of all things delicious from a very early age. Cooking is a huge part of her heritage and her love for her ancestors’ food and desire to keep their food traditions alive led her to journey back to her mother’s kitchen to capture the recipes from her childhood. Her first book Made in India: Cooked in Britain: Recipes from an Indian Family Kitchen was a top ten bestseller in the UK.
