Shanika Yapa’s chocolate chip cookies are perfect! Chewy circles of cookie with gooey, melting chocolate chips, perfected by a tinge of saltiness, uplifting its flavour, are probably the best item on the menu at Bakeology.
Bakeology, a home-run baking venture, was started by Shanika in early November this year, specializing in delightful, warm cookies, cakes and cupcakes, which taste homely and are comforting!
The menu is simple, consisting of classic flavours in the desserts she whips up in her kitchen. Cupcakes come in a variety of vanilla or chocolate, topped off with vanilla, chocolate or a salted caramel frosting, an orange variant filled with passion fruit curd, and topped off with whipped cream and a strawberry.
Delving into a few mini cupcakes she’s baked for the review, I find that the chocolate cupcakes with chocolate frosting are quite indulgent, with a rich chocolatey flavour coming through, whilst the chocolate cupcakes with salted caramel frosting are what I preferred. The richness of the cupcake is offset by the saltiness and light caramel flavour from the frosting, which make it a much more interesting cupcake option. Bakeology also does red velvet cupcakes with cream cheese frosting.
Moving on to the cookies, Shanika bakes some interesting variants, which include a chocolate chip (which I raved about earlier), peanut butter and jam cookies (peanut butter cookies sandwiched with a generous spread of strawberry jam), butter cookies with rosemary, red velvet sandwich cookies (two red velvet cookies sandwiched with cream cheese frosting) and Dulce de Dulce bars, which are made with milk and sugar, and feature a layer of peanuts and chocolate. The PB & J cookies taste quite nostalgic, with the peanut flavour not coming through strong, and the jam complimenting the cookie.
She also takes orders for cakes in the same variants as the cupcakes, and has included a tiramisu cake (sponge cake soaked in coffee and liqueur) and a black forest cake (chocolate sponge cake soaked in kirsch and topped with cherries) to the menu. When making an order, be sure to call Shanika two days ahead.
