views 364Now the sure fire way to get my kids to run screaming from the dinner table is to say the word salad. The word 'salad' is a bad word in our household, but I thought enough is enough, it is a New Year and one must make an effort with these New Year resolutions, despite the fact that January has already come to a close, better late than never. Of course I have not completely lost my senses, my children will on no account eat salad because I made resolutions and importantly because I said so, so I go and do what I do best, I disguise it. Filled with scrumptious vegetables, lots of proteins and even noodles, my kids eat salad and they love it!
Ingredients
· ½ packet of spaghetti
· 1/3 cup peanut butter, softened
· 2 tablespoons honey
· 1/4 cup dark soy sauce
· Juice of 2 limes
· 1 teaspoon hot sauce
· 1 clove garlic, grated
· 2 tablespoons vegetable oil
· 2 cups cooked chicken
· 1 cup packed fresh spinach, thinly sliced
· 1/3 cup shredded carrots
· 4 scallions, thinly sliced
· 1/4 cup chopped peanuts
· 2 tablespoons chopped coriander
Directions
Bring a large pot of water to a boil, salt it, add the pasta and cook till just done. Drain; rinse under cold water and set aside.
In a large bowl, whisk together the peanut butter, honey and 1/4 cup warm water. Whisk in the soy sauce, lime juice, hot sauce and garlic. Pour in the oil in a steady stream, whisking to combine. Add the reserved noodles and toss to coat.
Now into the noodles add the chicken, spinach, carrots, scallions, peanuts and coriander, give all a another toss and enjoy!
