Niccolo Coffee
The first time you taste Niccolo Coffee will be memorable. The smooth, elegant ambience that revels through your senses when you take that first sip is what makes this coffee so special. Niccolo Coffee is sold exclusively at the Butter Boutique Café (34, 27th Lane, Colombo – The Radisi building) so you can couple your delightful coffee with some of the finest cakes in town.
If you know your cakes you will know that Butter Boutique is run by Rukshi Nethicumara who started as a home baker and has now progressed to opening her own cafe.
To understand the story behind Butter Boutique and Niccolo Coffee you must understand how it all started so I was lucky enough to catch up with Davide Drummond, the founder of Niccolo Coffee, while he was in Colombo training the team at Butter Boutique last month. It all started with an email, Davide explains, “She (Rukshi) was in New York City and sent me a mail regarding Niccolo Coffee in which she wrote about her story and how she bakes and sells her cakes on weekends at a market.” Davide adds that he saw a comparison between the two of them in that he also started quite small and built his coffee company. “I’m very big on people who work hard and I found a lot of passion in Rukshi,” he says adding that he replied and agreed to train her staff to serve Niccolo in Sri Lanka.
“I started eight years ago but we have been on the road for just three years,” he says adding that apart from Australia where it all started, he also has six coffee houses in New Your City with 12 more set to open in 2016.
Davide is of Brazilian origin but has been living in Melbourne for 20 years now. As much as Brazil is passionate about coffee so is Australia. It all started in New Zealand – they were the first people in the world to roast coffee fresh and this trend took off in Australia too. Coffees like the Flat White and Long Black are of Australian origin, Davide adds.
Spending time here, he feels “Sri Lankans are ready for change, open to different things and ready to start drinking good coffee.”
It is the blend that makes this coffee exceptional – It contains 100% Arabica beans sourced mainly from South America, of which 40% are from Brazil, 20% each from Guatamala and India and 10% each from Ethiopia and Timor.
The coffee is of a medium roast and therefore holds more flavour while one of the strongest characteristics of Niccolo Coffee is its soft smooth texture which hits the hard palate with a chocolaty, nutty (hazelnut) flavour and your soft palate with a citrus flavour. All these notes are extremely subtle and deliver a magical sensation across your senses.
“Coffee and cake is a marriage made in heaven,” he adds saying that just looking at the cakes on offer at the cafe, it is easy to see that a lot of love goes into baking and creating each and every one.
In order to serve good coffee you need a good coffee machine, and Butter Boutique has the best machine in town that of the La Marzocco coffee machine. Davide explains that the crockery is also important which is why he carried all the coffee cups to Sri Lanka.
