The Startup Cook: Chicken Loaf

What kind of food snob are you? If it doesn’t look pretty, you wouldn’t even bother with it? If you possess this kind of elitism, then I do sympathise - because you do not know what you are missing! This recipe for instance is anything but easy on the eyes, but tastes so SO delicious. 

The backstory of this oddly looking dish is boring. Or the simple yet mundane reason of wanting to be healthy. By default, I decided to pack in on the protein - chicken, and lessen (a little bit) at least my carb intake. This was of course inspired by a meatloaf recipe I saw online. 

Accompanied with a bed of veggies, it is just enough for a solid and nourishing dinner. 

Ingredients 

100g of minced chicken 
½ an onion 
2 cloves of garlic 
½ an egg (beaten) 
½ a lime 
10 Krisco biscuits 
1 tbs of tomato sauce 
½ tsp of mustard 
1 tbs of flour 
1 tsp of olive oil 
Salt 
Pepper 
Oregano 
Paprika 

Directions 

Preheat oven to 175 Celsius. 

Juice the lime over the minced chicken, add a teaspoon of salt, pepper, half a teaspoon of curry powder and paprika, stir and let it marinade. 

Place the biscuits in a Ziploc bag, and bash them until they turn in to powder. 

Finely dice the onion and garlic and set it aside. 

Place a saucepan on a medium high heat, and pour the oil in to it. 

Add the diced onion and garlic to it and sauté with half a teaspoon of sage, salt and pepper. Once the onion has roasted take it off the heat. 

Dump the sautéed onion and crumbled biscuits in to the marinated chicken. 

Merge all elements together. Then add the egg to it and form it until it becomes firm. 

Place the chicken in a ramekin. 

Place the ramekin in a bowl of water and chuck the bowl in the oven. 

Bake for 30 minutes. 

While the chicken is baking, mix the mustard and the tomato sauce. 

After the chicken has baked, lather the tomato sauce mixture on top of the chicken. 

Remove the ramekin from the bowl of water and bake for ten more minutes. 

Serve with vegetables. 

Disasters, Warnings and Tips 

Do not fill the water bowl with a load water. Just ensure it covers half the ramekin. Or you will get water in to the ramekin. 

This recipe requires a little work, but it is so worth it! 

You can make life easier for yourself and skip the tomato sauce topping.

As you would have clearly seen, I accidently filled the baking dish with a lot of water. Taking the ramekin out was without getting water inside was the most difficult thing.
