The Startup Cook – Soy Curry

Over the years, I have had to hear quite a few complaints regarding soya. Now for a true carnivore, (for obvious reasons) soy meat would not cut it. However for those who complain that soya isn’t tasty and that is why they do not want to eat it… well this recipe is for them.

It is quite easy to go astray when preparing something like soya. Its innate rubbery texture and its instant-ly cooked ability can play with the overall taste. Therefore I generally go for a spicy curried, peppery version such as this.

It is a very convenient make, perfect with your rice and curry or some roti or you can snack on it plain. It is delicious either way.

Ingredients

1 packet of soya meat
½ cup of coconut milk
1 onion
2 green chillies
2 cloves of garlic
1 tsp of ginger (grated)
1 tbs of oil
2 tsp of soy sauce
1 tbs of chilli flakes
1 tsp of dil seeds
1 tbs of curry powder (roasted)
Turmeric
Cinnamon
Chilli powder (roasted)
Salt
Pepper

Directions

Empty the soya in to a bowl. Juice the lime over the soya, add the chilli flakes, soy sauce, one teaspoon of turmeric, one teaspoon of chilli powder, include the seasoning (in the packet) mix and leave it to marinade.

While the soya is marinating, peel, wash and fine dice the onion and garlic. Cut the chillies in to sizeable pieces and set it aside.

Pour the oil in to large saucepan and place it on a medium high flame.

Add the soya in to the pan, with a teaspoon of salt and pepper, fry it for few minutes and then take it off the heat.

To the same pan, add the dil seeds and let it cook for a minute.

Then add the ginger, onions and garlic to it, sauté it until the onions start to caramelise.

Add the roasted curry powder and green chillies to it, stir and pour the milk in to it.

Dump the semi cooked soya in to pan, add a teaspoon of pepper to it and let it cook.

Once the curry starts to evaporate and the soya has cooked, take it off the heat.

Disasters, Warnings and Tips

Hi five yourself! You just made one of the yummiest curries ever.

Love the peppery taste of this dish.

The latest season of House of Cards is the bomb. I love Claire Underwood and all her shoes.

I snack on this. Who needs the rice?

Let the curry evaporate and maintain a masala like texture. It’s delish!

Use spices according to personal taste.
