You might be thinking that I am trying to teach you an extremely basic recipe and well you’re not entirely wrong. To cook an egg is almost effortless I admit, but this particular method I had to share because I believe it would be utmost useful to you.
A solid piece of chicken or fish is very much appreciated in my rice and curry. However having one on a daily basis is not necessary, instead an egg would do. Now I am not a boiled egg fan, well at least not with rice. I prefer something fried and sharp on the bite like this omelette.
It includes ingredients that can be easily found in your kitchen. A convenient make, it is a scrumptious option for those days you prefer your food to be meat free.
Ingredients
1 egg
½ an onion (medium)
1 green chilli
½ a tomato (small)
2 cloves of garlic
2 tsp of margarine
1 tsp of Maldive Fish
½ tsp of chilli flakes
Salt
Pepper
Directions
Clean, wash and fine dice the garlic, onion, tomato and green chilli.
Crack the egg in to a bowl, beat it and set it aside.
Place a saucepan on a low flame and melt the margarine in it.
Once the margarine has melted, pour the egg in to the sauce pan.
Scatter the Maldive Fish and chilli flakes on to the egg. Season with salt and pepper.
Then add the garlic, onion, tomato and green chilli to it, and let it cook.
Once the base has formed, fold the omelette and fry on both sides.
After it has cooked, take it off the heat.
Disasters, Warnings and Tips
To get that perfect consistency, slow cooked on a low flame is the best.
WHAT IS WITH THIS HEAT?!
Have you watched The Night Manager? With Tom Hiddleston and Hugh Laurie? It is amazing!
The Maldive Fish inclusion is a tip from my mother.
I used a little extra margarine as my non stick pan wasn’t so non stick.
