views 352The Startup Cook – Sausage, Pepper and Potato Bake
When you have a full time job that extends pass your contractually obligated hours, cooking becomes a tedious task. However dining from out frequently does not suit my palate either. Thus I search for easy light dinner options such as this bake.
Found on allrecipes.com, this particular dish is a delight. The sausages and potato, garnished with onions and the topped with pepper is fantastic. The punch from the pepper compliments perfectly with the meat and potato. In addition, this is a convenient make with almost no cleaning up afterwards.

Ingredients
3 – 4 chicken sausages
1 (large) potato
1 bell pepper
¼ cup of chicken stock
3 spring onions
2 cloves of garlic
Olive oil
Salt
Pepper
Chilli flakes
Chilli powder
Oregano
Sage
Directions
Preheat the oven to 200 Celsius. Prepare a baking dish and set it aside.
Wash and clean the spring onions, garlic, potato and bell pepper.
Fine dice the onion and garlic, slice the bell pepper and potato and set it all aside.
Pour a tablespoon of oil in to the pan and place the pan on a medium high flame.
Fry the potato slices in the saucepan. Add some salt and sage to it.
After the potatoes have turned colour, take it off the heat.
Then lightly pan fry the sausages. After it has cooled, cut the sausages in to pieces and place it in the prepared dish.
Add a teaspoon of chilli flakes, ½ teaspoon of chilli powder, pepper and stir.
Place the potato on top of the sausages, add a teaspoon of oregano, the diced garlic and spring onions.
Then add the chopped bell pepper on top of it.
Pour the chicken stock in to the dish.
Bake for 20 – 25 minutes.
Disasters, Warnings and Tips
Serve this with some bread. YUM!
For a powerhouse flavour add two tablespoons of red wine.
What is with the heat? I got a ruddy heat stroke also!
Except for salt feel free to utilise spices according to personal taste.
Add some grated cheese before you serve.
This bake is enough for one hungry person and two semi hungry people.
