The Startup Cook – Brown Butter Chocolate Chip Cookies
Until Christmas 2015 I was deprived of an oven, which was systematic torture because there goes all my biscuit baking. Therefore when I finally did get my oven, I celebrated by making this fantastic recipe which I have been craving to make for months.
To improve on flavour, adding chopped cashews to a chocolate chip cookie batter is common practice. However cashews are expensive and it is not an ingredient that is easily found in my kitchen. An easy substitute that provides the same nutty flavour is Brown Butter.
It would perhaps cost you a few extra minutes of your precious time, but the taste is completely worth it. Once you go brown butter chocolate chip cookies there is certainly no going back.
Ingredients
1 ½ cups of all-purpose flour
½ cup of brown sugar
½ cup of chocolate chips or 80-100g of cooking (dark) chocolate (chopped)
6 tbs of butter
1 egg
1 tsp of vanilla essence
½ tsp of baking powder
Directions
Preheat the oven to 180 Celsius. Prepare a baking sheet and set it aside.
Include the butter in a saucepan and place it on a low heat.
After the butter has melted, increase the heat to a medium high flame and swirl the butter until it becomes brown.
Once the butter has become brown, take it off the heat and let it cool.
Dump the sugar in to a large mixing bowl.
Pour in the cooled brown butter in to the sugar and whisk until the ingredients have merged together.
In a separate bowl mix the flour and the baking powder together. Then add it to the butter-sugar mixture and whisk for a few seconds.
Pour the vanilla and add the egg in to the mixture and whisk until a thick dough forms.
Then fold in the chocolate chips.
Using your hands, form the batter in to small balls and place it on the baking tray.
Bake for 15 -20 minutes.

I love chocolate chip cookies. There is an awesome sugar crust on it as well. Yum!
