views 627I feel the warm glow of summer would not shine so brightly if one does not indulge in a slice of this heavenly concoction. No, the slight hues of red does not mean it's a red velvet or some absurd red food dyed cake. It is in fact the real deal. It's wondrous, light as a feather, soft as the summer clouds with a hint of refreshingly sweet strawberries, THIS strawberry cake MUST be on your list of summer foods to try. The important factor I like about this cake is that it's understated but elegant in every bite, it gives without taking, is not bold like its chocolate counterpart but still shocks your tastebuds into exhilaration. It's light, fruity, refreshingly comforting and will possible be your new family favourite.
Ingredients
1 box white cake mix
1 box strawberry-flavoured instant gelatin
1 package strawberries, pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water
Strawberry Cream Cheese Frosting
1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
1 package frozen strawberries, pureed
1/2 teaspoon strawberry extract
7 cups confectioners' sugar
Directions
Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean. Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
For the frosting:
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in the strawberry puree and the strawberry extract. Gradually add confectioners' sugar, beating until smooth. Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

Jan 28, 2018 at 02:50 amIf you are going to be serving the cake at a later time after putting it together, you may want to add the strawberries shortly before serving so they don t dry out.
