views 417Cooking for children is indeed quite a strange but riveting experience. Serve my children a piece of nutritious fish and they'll run a mile and even jump in the lake. There are groans galore and sudden onsets of stomach bugs and various ailments being presented, even down to a niggling little toe. Yes these are my children and they will try at anything. But place the same fish and even add some nutritious vegetables into a homemade baking parcel, and they are intrigued, enthralled, ravenous and proclaiming with loud shouts of what a great cook their mother is. Therefore as you can see, disguised, my Lemon Pepper Fish parcels were indeed a resounding success in our household. So give it a try, it will definitely make the staunchest of averse fish eaters take interest, AND it's delicious too!
Ingredients
- Fillets of fish (deboned)
- A cup of lemon juice
- ½ cup olive oil
- Minced garlic
- Sprigs of dill
- Salt and pepper
- Thinly sliced potatoes, carrots, and onions
Method
First, using baking paper cut a round circle much larger than your fillet of fish. Now on one side of the circle place your chosen vegetables. Then in a separate bowl make the marinade, into the minced garlic add salt and pepper and a few dill leaves, a touch of mustard, now add your lemon juice and half a cup of olive oil, stirring constantly. Once completely mixed, take a few tablespoons of the marinade and pour over the vegetables. Then place your fillet of fish on top, add a few more slivered onions and tomatoes and a few more tablespoons of the marinade. Carefully take the other half of the circle of parchment, fold over the fish and carefully twist the edges together so that the fish and vegetables are encased inside, without any leakage. Place on a baking tray and bake for twenty minutes or until the fish is cooked through. Break open and enjoy!
