The world is full of dishes of every kind imaginable. From the savoury to the sweet, it is good to broaden our culinary limitations and try something new once in awhile. “Caramelitas” as the word tickles off one's tongue is an Italian sweet enjoyed with a strong cup of coffee. One can indulge in a hot cup of brew if it takes your fancy, but I find these caramelitas can be just relished on their very own. The gooey caramel blending into the wondrous chocolate, whilst the oats add just the bite to the already satisfied eater. These are great as afternoon tea, in lunchboxes or even with a dollop of ice cream, can be entertained as a decadent after dinner dessert. Whatever the fancy, they are indeed to be tried and enjoyed! 

Ingredients 

- 1 cup plus 1 tablespoon all-purpose flour, divided 
- 1 cup quick-cooking oats 
- 3/4 cup packed brown sugar 
- 1/2 teaspoon baking soda 
- 1/4 teaspoon salt 
- 3/4 cup butter, melted 
- 6 ounces semisweet chocolate chips 
- A bag of caramel toffees (good old-fashioned Deltas would do) 
- 1/2 cup chopped cashew nuts 

Method 

In a large bowl, combine 1 cup flour, oats, brown sugar, baking soda and salt. Stir in butter and mix well. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 10 minutes or until set. Sprinkle with chocolate chips. Now melt the caramel toffees and add the remaining flour until blended; drizzle over chips. Sprinkle with nuts. Bake 20-22 minutes longer or until bubbly. Cool completely; cut into bars.
