views 362Dear readers, I did indeed make a valiant attempt to include a healthy meal to be cooked for your dear family this week. But disaster loomed in the form of this heavenly concoction of strawberries, cheesecake and brownie, it was indeed love at first bite. I have not gone completely bananas, you heard me right, there is brownie and cream cheese all in one delectable mouth, and your children will indeed feel that you, their super hero mother, could possibly take one both Batman and Superman and WIN, this is how much they will be dazzled by your greatness after a single bite! In hilarity aside, this indeed is a decadent dessert to be brought out with your best china, but ridiculously easy to make. So “wow” your family, your friends and your neighbours, you will indeed set the bar with dinner parties, with this little dessert for all.
Ingredients
For the Crust
2 cups waffle cones, crushed
6 tablespoons butter, melted
For the Pie
1 brownie mix (9x13 size)
1/4 cup oil
2 tablespoons water
1 tablespoons instant coffee granules
1 egg
For the Cheesecake
1 (8 oz.) cream cheese, softened
1/4 cup sugar
1 teaspoon vanilla extract
1 egg
1 banana, smashed
2 tablespoons flour
For the Topping
1 container strawberries, halved
Instructions
1. Crush the waffle cones and combine with the melted butter. Press into a 9 inch pie pan.
2. In a large bowl, combine all the brownie ingredients and stir until mixed. Spoon into the crust carefully. Bake at 350* for 30 minutes.
3. While the brownie is baking, beat the cream cheese, sugar, vanilla, flour, and egg until creamy. Stir in the banana. Spread on top of the baked brownie very carefully. Bake another 20 minutes. Let cool on a wire rack. Refrigerate until serving time.
4. Before serving, place halved strawberries on top of the pie. If preferred can melt some chocolate and drizzle over strawberries.
