Hectic weekdays can be a real mood kill. You literally do not want to do anything let alone sweat over a hot stove for hours. To help you better cope, I have developed a chicken dish inspired by my friend Maneshka.
The steps are straightforward and perhaps the only heavy task here is the marinating and frying - which obviously means that this chicken is an effortless make. However the most important part here is the TASTE. For such an easy process, the results are absolutely delicious.
You can choose to serve it with some steamed rice or noodles or with some crusty bread. It doesn’t matter this is perfect with either one.
Ingredients
500g of chicken wings portions
7-8 spring onions
3 cloves of garlic
½ cup of ketchup
¼ cup of water
½ lime
½ tsp of ginger (grated)
Paprika (hot)
Curry powder (roasted)
Chillie powder (roasted)
Cinnamon powder
Worcestershire sauce
Salt
Pepper
Oil
Directions
Wash, clean and place the chicken in a bowl.
Juice the lime over the chicken, add a teaspoon of salt, pepper, cinnamon, oil, and two teaspoons of curry powder, chilli powder and two tablespoons of Worcestershire sauce to the chicken, stir and leave to marinate for at least half an hour.
Wash, clean and fine dice the spring onions. (separate it from its zesty leaves).
Peel, wash and fine dice the garlic, and set it aside.
On a medium high heat, heat up some oil in a saucepan.
Add the chicken pieces in to the hot oil and fry it well.
Once the chicken has fried, strain it out and place it on dish (covered with paper serviettes).
While the chicken is cooling down, add a teaspoon of oil in a separate pan and place it on a medium high heat.
Then add the diced spring onions, garlic and ginger to it and sauté.
Once the onions have cooked well, then add the ketchup to it and stir for a few seconds.
While stirring, pour the water in to the sauce and add a teaspoon of curry powder, paprika and pepper to it and let it cook for a minute.
Then add the chicken to the sauce, stir it for a minute and take it off the heat.
Chop some spring onions leaves and scatter it on top of the chicken, before serving.
Disasters, Warnings and Tips
This dish is so so so so yum!
I had this chicken with some rice noodles and carrot. Heaven!
For optimum scrumptious results, marinate the chicken for at least two hours.

Leftovers make a good lunch box treat.
I hate getting sick on weekends. It feels like you are being punished for having free time.
