The Startup Cook – Rocky Road

This rocky road is based on Nigella’s Rocky Road Crunch Bars.She is my favorite celebrity cook. The accent (Really who can resist a posh British accent?), her hair all neat even after an hour in the kitchen (not perspiring like she just ran for the Olympics) and her love for cooking (& eating) makes her the perfect Culinary Goddess.
 
If the above facts don’t convince you that she’s indeed divine, try this recipe. You’ll soon be singing praises of worship. 
 
 
 
 
 
 

 

 

Ingredients
 
400g of Cooking Chocolate (Dark)
 
125g - 150g of Marshmallows (1 packet)
 
1 packet of Marie biscuits
 
9 Tbs of Butter
 
3 Tbs of Golden Syrup
 
2 tsp of Icing Sugar
 
 
 
Directions 
 
Chop up the marshmallows in to small bite size pieces.
 
On a very low heat melt the butter, chocolate and golden syrup in a saucepan. (Scoop out about ½ cup of this melted mixture and keep aside). 
 
Put the biscuits in a freezer bag and bash it up. You’re looking for powder, crumbs and pieces.
 
Fold in the bashed up biscuits to the chocolate mixture.
 
Add the chopped marshmallows to it. 
 
Tip the mixture in to a tray. 
 
Then pour the ½ cup of chocolate mixture over the biscuit-marshmallow mixture and smoothen the top. 
 
Refrigerate for about four hours.
 
Cut in to pieces and dust with icing sugar by putting it through a tea strainer or small sieve.
 
 
Disasters, Warnings and Tips
 
Serve this with your evening cup of tea. 
 
I add a few pieces of milk chocolate to the cooking chocolate; I feel it lessens the harshness of cooking chocolate. But it’s purely optional.
 
There’s something therapeutic about bashing up those biscuits.
 
You don’t have to stick to biscuit and marshmallows only. You can add Cashews, dried fruit… etc.
 
The price of Marshmallows these days!?! Good grief! Talk about inflation!
 
Ensure the chocolate mixture has slightly cooled down by the time you add the marshmallows, or it’ll immediately melt.
 
Nigella & Charles Saatchi are divorcing, after the whole assault scene. Ten years of marriage. Sigh. 
 
I used an old baking tray to pour the mixture in.

    So Shazz brought over some of her rocky road and it was really yummy! It is one of my favourite things to make (not to mention eat as well!) Shazz can you add fresh fruit like strawberries to this? You've mentioned dried fruit but wondering about fresh fruit as well.
