Pasta is one of those convenient and wholesome dinners anyone can make after a taxing day. It’s delicious and quite a favorite among everyone, especially kids.
This recipe however may not be suitable for kids but it is perfect for adults. The punch that the vodka gives to this dish makes is incomparable. Scrumptious and soothing to the buds, this recipe takes pasta to a whole new different level.
It is another fabulous Nigella Recipe. Obviously.
Ingredients
150g of Penne Pasta |
120g of Chicken Breast (boneless) |
30g of Parsley (chopped) | 25 ml of Vodka |
4 Medium sized Tomatoes |
1 Medium sized Onion |
3 Tbs of Tomato Ketchup | 2 Tbs of Fresh Cream |
2 Tbs Olive Oil | 1 Tbs of Butter |
1 Tbs of Oregano | 1 Tsp of Paprika |
½ Tbs of Thyme | ½ Tbs of Basil |
½ Lime | 1 Tsp of Turmeric |
1 Tsp of Chilli Powder |
Directions
Wash, clean and cut chicken in to bite size pieces.
Squeeze the lime over the cut pieces, add Turmeric, Chili powder and leave to marinade.
Boil the pasta in a deep pot according to the instructions on the packet and a teaspoon of salt.
Wash, clean and fine dice the onion in a processor.
Blanche Tomatoes in hot water for a few minutes then peel and blitz in a processor.
Heat up a tablespoon of olive oil in a sauce pan, fry up the marinated chicken and set it aside.
In a heavy based pan, heat up a tablespoon of olive oil on a medium high flame.
Add the diced onion and sauté for a few minutes.
Add the processed tomatoes in to it and cook for a few minutes.
Stir in the ketchup to the sauce, immediately add oregano, Paprika, thyme, basil and cook on a low flame.
Add the fried chicken and fresh cream in to the sauce and stir for few minutes.
Take ¼ cup of boiling pasta water and add it to the sauce.
Add the chopped parsley and let it simmer.
Strain the pasta once it has boiled.
Pour in the vodka and add the butter to the pasta and turn for a few minutes.
Finally add the penne pasta in to the sauce and toss.
Disasters, Warnings and Tips
Garnish with some grated cheese.
Reruns of castle and this pasta is my refuge.
Add Salt and Pepper according to taste.
Chicken is an option; this recipe will still be perfect without it.
Pasta and Vodka? Nigella is so brilliant.
This recipe took me only an hour to prepare. However it serves only one hungry person.
Feel free to increase on the oregano, paprika, thyme and basil.
I used Chilli and garlic sauce. It’s not compulsory to use tomato sauce.
If you’re not too particular, use the same pan to fry the chicken to make the sauce.
