The pressure of your food pleasing someone else’s palette (besides your own) is too stressful for some. Hence dinner for one is always my favorite thing; especially when you’re experimenting with new recipes.
This particular recipe was found on about.com and is one of my favorite loner-dinner options of all time.
Slightly tweaked to suit the local taste buds, the garlic fusion teases them making you want for seconds.
Ingredients
1 Chicken Quarter | 8 Cloves of Garlic |
¼ Cup of Chicken Stock (Maggie Chicken cube) | 2 Tbs of Olive Oil |
1 Tsp of Chili Powder (Roasted) | 1 Tsp of Oregano |
1 - ½ Tsp of Salt | ½ Tsp of Pepper |
½ Tsp of Turmeric | ½ Lime |
Directions
Preheat the oven to 215 °C
Wash chicken thoroughly and clean out unnecessary skin.
Squeeze lime over the chicken; add the salt, chili powder, turmeric and leave to marinade for half an hour.
Meanwhile peel 5 garlic cloves and pound the cloves with a mortar and pestle.
Add a table spoon of olive oil in to a bowl, add the oregano, mashed up garlic and make a paste.
Coat the marinated chicken (well) with the paste and permit it to rest for about ten minutes.
Then place the chicken on a baking dish and sprinkle the chicken with pepper.
Pour the stock in to the dish and then add the tablespoon of olive oil in to the stock
Strategically place three cloves of garlic (peel on) in to the baking dish.
Bake for 40 – 50 minutes.
Disasters, Warnings and Tips
Ensure to wash all the blood off the chicken.
You might have to season with salt after baking it.
The scent of garlic being cooked is heavenly.
I had this with some boiled and salted spinach, and braised carrot. Yum!
A good marinade is crucial or the chicken will taste dry inside.
I had some chocolate later, so out went the diet.
