Baking as mentioned many times before is a culinary method I am attempting to master at snail pace. I remain reluctant as (again mentioned many times before) it requires precision.

However since I took the liberty of making dinner, I decided to take the opportunity and practise my baking skills.

This particular recipe is from www.allrecipes.com. It’s easy to make, less time consuming, tasty and wholesome all at the same time.

Just add some buttered bread, veggies and dinner is served. Living up to its title, I must say that this is indeed amazing chicken.

 


 

Ingredients

 

350g of Chicken Breast (boneless)  ½ Cup of Mayonnaise
1 cup of Bread Crumbs 1tbs of Olive Oil
1 Lime 1 tsp of Garlic Paste
2 tsp of Chili Powder Thyme
Oregano Salt
Pepper  

 

 

 

Directions

 

Wash and clean the chicken of any residue skin.

Squeeze the entire lime over the chicken and set aside for a few minutes.

Add the garlic Paste, 1 tsp of chili powder, ½ tsp of salt and pepper and leave to marinade for 30 minutes.

Preheat the oven to 425 degrees F (220 degrees C).

Grease up a shallow baking dish with olive oil.

Coat each portion of chicken with mayonnaise.

Stir in ½ teaspoon of salt, 1 teaspoon of chili powder to the breadcrumbs.

Roll the mayonnaise coated chicken in the bread crumbs.

Place the chicken on the greased baking dish and bake(uncovered) for about half an hour or until the chicken inside is no longer pink.

Season with salt, oregano and thyme before serving.

 

 

Disasters, Warnings and Tips

 

A good marinade is crucial.

 Garnish with some chopped parsley as well.

 The title ‘Amazing Chicken’ sounds odd too me. Wonder what the people at allrecipes.com were thinking.

 Mayonnaise provides a slightly sweet base, so increase a little more on the chili powder while marinating and in to the bread crumbs.

 Garlic paste for the marinade is optional. Feel free to substitute it with another spice.

 Spy on your chicken while it’s baking. You don’t want it to burn.

 I had this with mashed potatoes, braised carrots and bread. It was delicious.

 The mayonnaise will ooze while it’s baking. Don’t panic. It’s supposed too.

 I was listening to Rihanna’s ‘Unapologetic’ album while making this. I decided that I like that album.

 You can grease the tray with vegetable oil or butter.
